With over thirty years devoted to refining our recipe, we're thrilled to impart some wisdom. Though we hold back on divulging our precise blend (to keep some rituals intact), these guidelines will assist you in crafting dough that rivals that of any pizzeria, right in your own kitchen.
The Importance of Flour
Exceptional pizza dough is built on the foundation of premium flour. Our recommendation is to opt for 00 flour, an ultra-fine Italian variety with a protein level approximately at 12%, which yields a dough that's both robust and tender. Should 00 flour be elusive, a viable alternative could be bread flour, which may alter the texture marginally.
Water's Temperature and Its Role in Hydration
Water's temperature plays a central role in determining the fermentation duration and the evolution of your dough. Employ cold water around 45°F (7°C) for extended fermentation, fostering superior flavor. For a hastened fermentation process, warmer water near 85°F (29°C) would be suitable. Aim for a hydration ratio, or water to flour proportion, in the region of 60-70% to suit typical household ovens.
Less Is More: Yeast and Time
A critical component to a flavorsome dough is to use a scant amount of yeast and afford the dough ample time to ferment. A mere 0.2% fresh yeast to flour weight, coupled with a lengthy fermentation period ranging from 24 to 48 hours, can instigate the development of a complex flavor profile and make for a more easily digestible dough.
Salt's Multipurpose Role
Beyond mere seasoning, salt bolsters dough's gluten network and modulates fermentation. It is advised to use finely-ground sea salt at about 2.5-3% of your flour's weight. Introduce it once the flour and water begin to integrate, averting immediate contact with yeast.
The Craft of Fermentation
Following the mix, let your dough undergo initial fermentation at ambient temperature for two hours, then allocate into individual portions. Store these segregated dough balls in capped containers and refrigerate for 24-72 hours. It's during this cold fermentation phase that starches are enzymatically converted to sugars, enriching the flavor and contributing to that distinct crust browning characteristic of our pizzas.
Delicate Handling
Prior to the pizza creation process, extract your dough from the cool storage 1-2 hours ahead of baking to let it acclimate. Tend to the dough with gentle care to retain all developed gas pockets. Instead of a rolling pin, employ your digits to coax and expand the dough, sustaining the airiness.
Heat: The Finishing Stroke
Although our ovens attain scorching temperatures of 850°F (454°C), most home ovens will plateau at 550°F (288°C). Compensate by preheating a pizza stone or steel thoroughly for no less than an hour. This mimics the blast of intense bottom-up heat needed for that sought-after crispy exterior and fluffy interior.
